Lori over at A Frugally Old-Fashioned Homemaker has some wonderful recipes! We recently tried her yellow rice and sausage and have fallen in love. It is a very simple and very cheap meal but best of all, oh so tasty. I like it better than our traditional yellow rice and chicken. Add some peas and your meal is complete.

1 lb. sausage, mild or hot
1/2 pkg. dry onion soup mix (her recipe states 1 package but it was too salty for us)

2 (5 oz) tubes of saffron yellow rice (I have used bulk yellow rice as well)
3 cups water

Brown and drain sausage. Preheat oven to 350.
Lightly spray a 2 quart baking dish with cooking spray.
Add water, rice, and dry onion soup mix to baking dish and lightly stir.
Place drained sausage on top.
Bake for 1 hour.

We do this as well with a combination of hot sausage and keilbasa. I use fresh onions instead of the soup mix because of the salt issue. It is my SH's favorite, most-asked-for dish!
