FNCCC Assignement #2 - Aida Mollenkamp

Sorry, Aida. It was a flop.

Due to the long holiday weekend, I wanted to make a nice lazy breakfast. Cakey Buttermilk Pancakes sounded like they would be perfect. Ummmm, I was wrong. Cakey Buttermilk Pancakes turned out to be Thin Greasy Crepes. The girls had a few and seemed not to notice that they lacked any height. My husband is such a saint, he asked for seconds :)

I did try the Frozen Chocolate Bananas last week as well. Those where a HUGE hit!








Cakey Buttermilk Pancakes
Ingredients
1 1/4 cups all-purpose flour
1 1/4 cups well-shaken buttermilk
1/2 cup melted unsalted butter plus 2 tablespoons for cooking (I USED LESS THAN 1/2 CUP AND DID NOT GREASE THE PAN AT ALL)
2 large eggs
2 tablespoons granulated sugar
1 teaspoon kosher salt
1 teaspoon baking powder
Blueberry Maple Syrup, recipe follows (I DIDN'T TRY THIS)
Directions
In a medium bowl, whisk together all ingredients except 2 tablespoons butter until evenly combined and moistened thoroughly (some small lumps will remain). Set mixture aside to rest while griddle heats or cover and store in the refrigerator to rest up to 12 hours before using. (If batter rests, stir briefly before using.)
Heat a large seasoned cast iron skillet, frying pan, or griddle over medium heat. To check that the pan's properly heated, sprinkle a few drops of water on pan or griddle and water will "dance" around before evaporating. Melt 1 tablespoon butter in pan. When it foams, ladle 1/4 cup batter for each pancake and cook until bubbles cover the top, about 3 minutes. Flip and cook until golden brown, another 1 minute. Repeat with remaining batter.



Verdict: The recipe went directly in the trash. Here is the picture that accompanied the recipe. Mine couldn't have been any different. All of mine stacked together wouldn't have equalled the height of 3 of these babies.

  1. I've determined that any "pancake" recipe that requires the use of a whisk is going to be crepes, not pancakes. Sorry yours didn't work out, the picture on the website sure was tempting!

  3. Oh, I'm sorry that they didn't look out. I almost tried those pancakes too.

    Maybe increasing the baking powder would do the trick?!?! Hmmmm.

  6. I'm so upset!! I made her Pesto Lasagna, and now can't find my photo device to transfer the pictures! Ugh! Maybe I'll just post the recipe, and put a photo later? Yeah...that might work...

    I combined Aida Mollenkamp's (in case we got the wrong chef) quesadilla
    recipes and made my own modifications. We choose it because of the
    fresh peppers, onions and cilantro in our yard.

    quesadillas with jack and spicy sauce
    three cheese quesadillas - the three cheeses I used were cheddar,
    provolone and Guusto baked goat cheese.

    The best modification was to use wheat 8 inch tortillas.
