Kid Friendly Friday - Easter Eggs


So what do you do with all of your hard boiled eggs? I like deviled eggs but my kids do not. One thing they do love is Creamed Eggs Over Toast, a recipe from my childhood. It's easy and it's a good way to use your Easter eggs....it's also a really cheap meal. And NO, I did not make this Easter Egg, isn't it beautiful?

Creamed Eggs Over Toast

1. Make a white sauce (I season with salt, pepper, and nutmeg)

2. Add sliced hard cooked eggs

3. Serve over toast (I take a pizza cutter to the toast to cut in pieces and serve eggs over top)

If you don't have a recipe for white sauce I use the following low fat recipe:
6 tablespoons flour
3 cups low-fat milk

In a heavy medium saucepan, whisk flour to remove any lumps.
Gradually add 1 cup milk whisking until smooth.
Add remaining 2 cups of milk and seasoning.
Cook over medium heat, whisking constantly, about 10 minutes, until mixture thickens and boils. Remove from heat.

  3. That sounds REALLY yummy and I've never tried that. How about adding some cheddar cheese to your white sauce? ohhhh, yummy! We're doing eggs on Saturday and then we'll eat them as deviled eggs on Sunday or Monday. Have a wonderful Easter Sarah!

    Thanks for the recipe idea. I was just talking to a friend about how silly it seems to boil and color tons of eggs taht we won't use later. I will have to give your recipe a try.

  8. We always ate this when my father was out of town and mom was a little worn out, but we call it 'eggs goldenrod.' Even when I didn't like it I still thought that the name was pure poetry :)

  9. We have always had Creamed Eggs over Toast for Easter morning breakfast! It is totally tradition. I've been here for 49 Easters, so I suppose I have been eating this for about 48 years now. I can't wait until tomorrow morning!!

    I want to add cornbread to our table this year so we can have a choice between toast and cornbread or maybe just east both!!!

    We also use our boiled eggs for eggs salad sandwiches, salads, add to macaroni and potato salads, deviled eggs and sliced egg sandwiches.

    Thanks for posting the recipe, This is truly delicious. I always lick the plate too, not very cooth, but to me it is good to the last drop!!! lol.....

    Thanks sharing this wonderful suggestion with everyone. I hope some of our Blog friends try it and add it to their Easter traditions.
